Sixty pounds of butter.
That’s our family’s goal for the month of July.
It sounds a little crazy until you realize just how much butter our family goes through in a year! We cook almost everything from scratch, and butter finds its way into nearly every meal. By the time winter arrives, we always seem to be rationing the last few pounds, wishing we’d tucked a little more away in the freezer while the cows were producing rich summer cream.
Summer butter is something special.
The cream is thick and plentiful, and the butter churns into the most beautiful golden yellow you’ve ever seen—a color that comes naturally from fresh grass and long days of sunshine. It’s one of my favorite signs that what our cows eat truly makes a difference.
Our goal of 60 pounds works out to about two pounds of butter every day. Every pat starts with cream skimmed from the top of our fresh milk before it’s churned into butter.
Before anyone asks…no, we don’t sell butter. Every pound we make is tucked away for our own family’s winter supply, and somehow we still seem to run out before spring.
But you can make your own! If you’ve ever wondered how simple it is to make your own fresh butter at home, I put together a step-by-step guide here: https://www.greatheritagefarm.com/how-to-make-fresh-butter-at-home/
We’re also thankful to occasionally have extra fresh A2 raw milk available to share here on the farm.
Every gallon comes with the full cream left right on top—just as it came from the cow. That rich cream is perfect for skimming and making your own homemade butter, whipped cream, or simply shaking back into your milk (I think it tastes like ice cream base this way).
To make things a little easier, we now have an online milk reservation calendar! If you’d like milk this week, simply reserve your pickup time here:
Reserve Your Fresh A2 Raw Milk: greatheritagefarm.com/milk
Our farm store is open Monday, Wednesday, and Friday from 9:00–10:00 a.m. Milk is available on a first-reserved, first-served basis because our cows only produce so much each day and we need to keep some for our family as well.
Milk is $10 per gallon or $5 per half gallon. Per Minnesota law, you’ll need to bring your own container (we recommend half-gallon Mason jars) and pick up your milk here at the farm.
We can occasionally accommodate weekend or evening pickups—just ask!
One of my favorite parts of this summer has been watching my daughter Marion jump in to help. She’s become an important part of our milking routine and keeps the farm store stocked and ready for visitors. If you stop by, be sure to say hello!
Have a wonderful week,
Leah
